Hi folks. I am cooking for my brother in laws wedding reception.
Guest count : 350

My portion of the Menu :
Pulled Pork Sandwiches
Roasted Red Potatoes
Pit Beans

The family is providing all other salads / deserts / serving etc.
Not a paid catering gig by any means. Just us cooking for our family. I have the cooking space I need but am terribly concerned Im fouling up the amount of food I need.

I'm apparently not smart enough to use the food calculator.

Im figuring 1 # of prepared pork for every 3 guests.
With that being said Im not sure on sides at all.... Does the same figure of 3 people per lb of food hold up ?

Right now Im trying to allow for overrun and figuring on having 130 - 140 # each of Pork, potatoes and beans. Am I way off here?

If that is raw weight on the pork, you will run short.
Three 1/3 pound sammies = 2# raw
350/3 = 117# finished or *2 = 234 raw.
Beans and taters figure 4 oz or 4 servings per pound
Taters - 90#
Beans - 15 - #10 cans (1 can serves 25)
This will give you about a 10% fudge factor for seconds and over serves.

Sorry, I was indicating finished weight. so 130 - 140 # of finished / prepped pork.

Looks like I can back off the potatoes and beans a little.
Excuse my ignorance but Im not familiar with a #10 can. How many ounces is that?

For my beans I use a mix of Pinto, Black, White and Red Kidney. I am buying by the case in 15.25 OZ cans.

Thanks again Jarhead.... I should just change all my threads to "Jarhead helps istock understand the world" Laughing Laughing

I hope you have a BIG can opener. Shocked
You will have one sore thumb or wore out electric. Wink
Or you can really have fun and use a "John Wayne Can Opener". Don't even ask. Rolling Eyes
Best can opener ever invented.
