A perfect day for cooking some ribs up here in Oro Station.. It is 70 degrees out and its a great close to an amazing spring weekend, though I got some funky weather coming off the lake.. Seems like I got "the fog" rolling in off the cold lake..



It ends kinda half way to the water.. Laughing



Sun is shining in a clear sky on my side of the road..



So I found me a grate that fits perfectly in my fire box to which I added a pizza stone covered with a layer of foil.

I got things going with some Royal Oak lump a half dozen small chunks of wood that I mixed into the charcoal. I light things up with my torch on on side and got temps up to the 200ish range in about 20 minutes to half an hour with bottom and top vent half way open. As I approached 200 I bit by bit closed off both vents till I have the bottom vent closed and the top vent at 1/2..





I noticed some heat markings on the outside of the cooker after my test burn..



We will see if this continues as I use the cooker.. Over all I found it very easy to dampen down this unit for low and slow.

The side flip up shelves are an excellent feature for the camera, beverages and are sturdy enough for holding your meat.





The Komado will easily hold 3 racks of ribs and those ones are some big racks.



Got some baby red skin potatoes on for some smoked tater salad.





Some one else is enjoying the nice weather..

Thats got me want'n some ribs now. The second rack on the AKORN looks like a really good extra and it also looks like CG got a winner there.

Well hi.. it's me.. I'm back..

Sorry for the split post but after dinner.. Well, some birthday cake on top and I had me a food coma.. Laughing

So here's the rest.



After the spuds came off I put a few rashers of bacon up top to kinda act as a baste as they smoked up.



Sorry I missed a shot of the bacon when it came off.. I cooked it crisp so it could be chopped for the potato salad.



Lake ice blowing over from the big lake.



To the smoked baby red skins I added the chopped bacon, red onion and pepper, a couple pickles and fresh chopped dill. The dressing was mayo, a dash or two of pickle juice, a squirt of mustard, some tobasco and cracked pepper.



Shortly before they came off. I got to say I over cooked the ribs.. I was trying to go by time, a new cooker, and a cooker temp guage that I think is out by some. Guess it looks like I got to buy a new temp guage.. Wink They tasted darn good but they were, to my shame, fall off the bone... There is my excuses..

So I come before the brotherhood.. and sisterhood too..of the Smokering and confess my sins and seek forgiveness with the promise to correct my ways.

I over cooked my ribs..


I fell all better now, thanks my BBQ family..




Dinner as I knew it.

Plated up with the smoked tater salad and some slaw a drizzle of sweet sauce and a helping of the rub I used to season them.

David, That is a fine plate up to be sure of. Very Happy No shame in those ribs, I would work those over quicker than two gars could skin a minnow. Nicely done my man they look delicious. Very Happy
