I'm not a caterer or anything, just want to be (as Myron says) "King of the Cul-de-Sac." Anyway, I've brought my practice briskets to some of my wife's work parties in the past. My wife's boss is the same one she had in Austin, so she can appreciate proper TX brisket.
One of my wife's co-workers who has had my brisket on a few occasions asked if I could do one for her. I dropped it off today but don't know what I should charge. It was a drop off, I didn't even slice it. It was a CAB packer around 15lbs and cost me $2.70/lb. |

We usually get $10.00 per pound of cooked meat, enough to cover our insurance, rub, raw meat, prep time and cook time. _________________ Kurt

I usually charge my cost per pound(in the wrapper)x3 for brisket. I Figure to loose 30% from cooking/trimming and my price usually ends up being about $10 per pound of cooked meat. _________________ Well, boys, we got three engines out, we got more holes in us than a horse trader's mule, the radio is gone and we're leaking fuel and if we was flying any lower why we'd need sleigh bells on this thing... |

In a non-commercial venture (not for profit) I would look at your actual cost of the meat and seasonings, and add on what you think it is worth for you to do this for them.
Do you want to make $40.00 or $100.00 for your time?
Otherwise most not-for-profit organizations like private clubs and like business's will use a 40% cost ratio. multiply their costs by 2.5X
You got to be careful selling foods when you are not licensed, to try and keep it as close to legal as you can, charging cost plus your time may be the best route. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

$10-$12 lb ($10 if you're a nice guy) cooked weight, would get you a fair profit without having to do a lot of pencil work  _________________ Where rumors end and legend lives forever... |

| I see this thread has popped up again, I guess I never posted an update. I ended up charging meat cost+gas to buy it+charcoal+$25. Didn't really add everything up like the wood and rub because I have so much of it I need to use it up. |
