| I have my parent 50th wedding anniversary to cook for in 2 weeks (actually it will be their 51st but they waited for my brother to get back from Iraq) Any suggestions for a large inexpensive food safe container to put racks of ribs in for holding cold over night after rubbing? We will be serving pulled pork and ribs figuring 3 bones per person I'm looking at 40 racks..... Any help greatly appreciated!! |

So is that rubbed and still raw?
I would put them into large Foil pans, you can then saran over the top and foil over the saran.
Then put them into a cooler, and add ice, or add some ice first then , the pans then more ice.
The big coolers, 150 lt or 150 can, can't remember which it is, but they are big and white and have them at Sam's Club and CostCo for about $70.00 I think!
You should get all 40 racks into one of them. _________________ Here's a change Robert.

I have one of those like SoEzzy is talking about. They are great coolers.
I got mine at WalMart last year, and it was $65.00
I freeze water in milk jugs to cut down on having to buy ice for it.
Make sure you have help for moving it. Not thinking, I loaded mine up inside and needed to move it outside.
I don't think that I would rub them the day before. I would just trim and remove the membrane. Rub them when it's time to cook.
If your rub has a bunch of salt in it, you will have mushy and hammy ribs. _________________ Gunny 3073/4044/8411

@SoEzzy Duh!!!! Why didn't I think of foil pans!!!!! That will work great! I have the fridge space for it just couldn't wrap my head around a container to use.
@JarheadGood advice on the needing help to move the cooler. Our rub doesn't contain much salt and i like to rub them down about 3-4 hours before placing on smoker. |

Except the hinges are chicken chit...I've replaced them on all 3 of mine  _________________ This stuff ain't rocket science,,,Great Gramma cooked on a horizontal-partitioned wood smoker every day! |

No kiddin'.....They used to be pretty good until some rocket scientist redesigned them....Thinking of just putting aluminum ones on, but no pics so it hasn't happened yet !!! _________________ Have Fun Playin' with Yer Food !!!

Stainless ones on pg. 6 or 7

Best thing about the aluminum food pans is no extra washing of raw food containers, just chuck them.
While not the case here, I typically line the pan with plastic wrap if I'm using an acidic marinade. _________________ Jerk Pit Master
