why wont you boil an egg ever again? because if you steam them they naily fall out of the shell and are cooked to perfection !!

i put boiling water from the kettle in to the steamer and turned on the steamer for 2 minutes to let it get up to temp.
then using a sewing needle pricked the large end of the egg and laid it flat in the steamer (they don't need to be stud upright) then steamed them for 10 minutes.

as you can see they naily fall out of the shell.

How fresh were the eggs you used?

I will give this a try next time I make eggs.

Happy,

Timely post. My friend was just trying to figure this out, and I think steaming part might be the step he was missing.

What did you use for a steamer?

Thanks![/quote]

I was curious about putting a raw egg in the shell on the grate beside stuff I was smoking once.

Came out just like a hard boiled egg.

Or if you do boil them, you might try this technique to make them easier to peel.

Great to know it doesn't always work. I just saw that posted on another forum and thought it looked interesting. But yeah, could be a problem if you are making these to serve to others Laughing

I use it more to seperate the membrane than to get it to pop out, some will pop out others are just easy to peel. I let mine sit for couple weeks before I cook and peel.

Gave it a shot tonight, but used a steamer insert. My oldest wanted a couple hard boiled eggs for lunch tomorrow and I couldn't resist after seeing this earlier today.

Thanks!

Won't know until tonight, the kid likes to peel them right before eating (at school).

I'll be sure to post back.

Shocking the boiled eggs into ice water always works for me. Another reason for boiling and shocking into ice water is to prevent the grey-green crap from forming on the outer portion of the yolk. How do the yolks look on the steamed eggs?

Also, what does "naily" mean? Confused

Wild guess, "nearly".

I shock mine too, even though I've had both problems after shocking ("sticky" shells and discolored yolks).

The green yolk comes from overcooking I believe. I put my eggs in the pot with a inch of water over the top of them and bring to a low boil for 10min then run cold tap water over them for about 5min and normally dont have the yolks discolor.

I got one of those Eggsact Egg Timer things -- works perfect. I remove the eggs from the stove and quickly cool them with cold ice water and I don't have the green edges to the yolks.

http://www.amazon.com/HIC-Harold-Eggsact-Egg-Timer/dp/B000I1UVX2

I've read that fresh eggs are harder to peel after being hard boiled. Most articles I've read mention to wait a week or so after getting the eggs before hard boiling. I've not been able to test out this theory yet.
