After we took his load over, asked if he was ever going to ditch his 18-1/2 Weber.....
"You can have it, I was going to take it to the Goodwill"


It's an old one.....

2 or 3 layers of foil

I use a bottled sauce ( Fischer / Wieser brand) blueberry chipolte sauce; several other people make it, or I imagine you could construct your own from scratch.....cook down fresh berries, grind peppers,etc.

Liberal coating of granulated garlic, let sit a few min, then the sauce, then some extra of the dried blueberries.

Bake in foil for 1hr 45m----2hr 15min @ maybe 275
(this is the hard part,
cause I've done them all different heats & times, they still come out pretty good)
I just make sure they bubble along for at least half the time, listen for the low sizzle in the foil, like it's boiling, you know as in BOILED RIBS (probably kicked off the"Ring permanently for this one Embarassed Embarassed Shocked Very Happy !!)
Low heat brazing, I spose you'd call it ?

Take out careful like & use the juice & berries from the foil to glaze as many times as you have liquid for....10 -15 min apart...
I just pour right out of the foil ~~~>


Total time might be 3 1/4 hrs. or a bit more...No snazzy smoke ring..... meat's kinda weird purplish gray....taste is incredible....

Neighbor on the other side gave me his one touch 18 -1/2"
