We put a turkey in the smoker and a turducken in the oven.
The smoked turkey won on the taste test.
We followed the Apple Brine recipe on the virtualweberbullet.com. Basically an apple juice based brine & cherry wood.

| Well, I can just nearly beat you all. I had a 1/4 pounder in Ohare on Christmas Day. Left Wichita for San Jose, CA, had to go to Chicago to get there. What a way to run an airline! Didn't even get airline peanuts, but I could have bought a box of snacks on the flight. Anyway, made it to San Jose, finally, and today went to BBQ Galore to check it out. We don't have one of those stores anywhere close to Wichita. |

Christmas dinner in our house is traditionally Italian with antipasto, sausage and peppers, and spaghetti and meatballs. With a Sicilian wife there is just no other choice. Of course she and her family are a bit aghast that their Polish son-in-law has actually mastered the family recipes and now makes better sauce and meatballs than they do, lol.
For New Years I am definitely thinking that the smoker will need to run all day. I know that baby backs will be on the menu, but I have yet to decide on pork butt or brisket to accompany it. _________________ Dinger |
