Right now, I have six racks of loin backs, 2 fatties, and some smoked sausage. I might throw on some homemade Linked Italian Venison Sausage as well.

Not to mention anything that catches my fancy between now and Sunday night.


Merry Christmas and Happy Holidays to all. Oh, and may Santa bring you all the coolest smoker accessories on Earth.

I'm throwing on a pork roast and some bb and some wings and a ham my smoker is going to be full, I'll start all this tomorrow morning and right now I'm making a big pot of baked potatoe soup the whole house smells geat!!

Making a huge batch of my rib and chicken sauce as we speak. Also got the pressure cooker humming with a big batch of Black Bean Soup.

I have a 10 lb Prime Rib in the fridge and about 5 lbs of venison backstraps that are marinading now to smoke Monday morning
the Venison is marinading in Balsamic Vinegar, Olive Oil, Worschester Sauce, Tabasco, Diced Jalepeno, & Seasoned Salt for two days before I wrap it in bacon and smoke it over cherry.....mmmmmmmmmmmmmmmmmmmmmmmmmm

Spiral cut ham.

Gonna spray it with butter flavored pam, rub it down with black pepper.

Smoke it at 300 for 15 min a lb.

Did a spiral cut ham today for my neighbors, and 5 slabs of ribs for friends and family before I head north tommorrow. Did the ham in a pan with some spice seasoned sugar- tried a nibble before handing it over- ummm good! Very Happy

I believe the wife picked up a prime rib and a small turkey for Christmas dinner at my in-laws. looking foward to a white (gotta wait till after Chritmas!) Christmas week. It almost doesnt seem like Christmas here- I have had the AC on all week! Shocked

I'm doing a rib roast tomorrow, Cornish Game Hens for New Year's Day and thinking about doing pork butt or briskets in addition to brats wrapped in bacon (which I saw in another post on the Ring) if we have people over for New Year's eve day. The smoker is going to be busy.

Meaty stuff on the BBQ:-
Sirloin of beef
Pork loin
Golden Turkey with sage and onion stuffing
and maybe marmalade glazed ham.

Accompaniaments :- Mashed potato ,brussel sprouts ,roast potatoes and roasted parsnips.

Sauces:-Apple sauce ,Horseradish sauce ,English Mustard ,Cranberry sauce and Gravy.

Dessert:- Traditional English Christmas pudding with brandy cream.

Here's our turkey done up hurricane style--ready to go on the smoker in the wee hours. Its been rubbed wet and dry, wrapped and injected.

I put on three turkeys, three pork loins,one brisket and one ham.

My brother did this, so I'll tell it on him. He brought over and turkey and a ham for me to smoke. Well he was unwrappiong the ham while I put the turkey on. Then I turned around to checkout his progress, and he was putting honey on the ham and then some light brown sugar. Then he had me to put it on. Well he went to church while I cooked. Well after about an hour and half I went to spray some juice on the ham and noticed it looked strange. Well I looked closer and saw what looked like plastic, and sure enough there was a layer of plastic still on the ham.

Well I took it off and finished cooking the ham less the plastic. Well needless to everyone has been giving him a very hard time about his cooking skills.
