What cut(s) do you serve and why??
For the first 2-3 years I served uncut hind quarters because they were cheap.
I had a lot of people saying it was too big and I was seeing a lot being thrown away because it was just too much to eat.
We also had been asked for white meat as well as dark. Hind quarters are dark meat and some do not consider dark meat as healthy as white.
We started offering both white and dark in the way of cut up whole chickens cut 8 pieces to one chicken.
With quarters being (on average) $.89lb and average 14 oz, each one cost me (about) $.70.
Where as whole cut up chickens @ $1.44 lb and average weight of 3.5 lbs, each piece is costing me (average) $.63.
Over all, I find this cheaper...in the long run. _________________ Where rumors end and legend lives forever... |

Geronimo I cook whole birds and cut them to order. I split the breast and lay them breast side down for the first hour, then turn and baste til done. I don't pre-cut anything as I like keeping the juice in the chicken as much as possible. That way if someone wants a whole chicken I wrap it and send them on their way. All my chicken is sold on the bone and I find almost everyone has a preference for dark or light meat. My prices are a little better at 1.19/lb. _________________ UDS

Bootlegbbq you may want to check out some more prices on chicken.
I currently pay $1.20 for cut bird (which costs more).
Leg qtrs are only about $.69 (last I checked) as were whole birds. _________________ BBQMAN

I can get whole chickens much smaller Tyson (or some other non local brand) for $.69 lb or there about. Or I can buy locally grown (WA state) that range in size of around 4.5-5.5 lbs for $1.19 lb
I always buy the locally grown/harvested products when possible because I believe the quality is better and the product is fresher....but it is nice to know I have other options. _________________ Where rumors end and legend lives forever... |
