3 different events that day for us. Lunch for the Army reserve, Ham dinner for 350 church members, and a small 40 ppl private Super Bowl party appy's only Pulled pork sliders, Spinach Dip, Broccoli salad, Poppers, Mac an Cheese and 2-3 desserts.. This is why we don't open our restaurant on weekends...

Sounds like a some fun events Jim!

We have a pig roast with steamed lobsters, clam chowder, roasted red potatoes, coleslaw, baked beans, fresh salads and drinks to provide for 15 guests.

Bartender service was additional.

We will be eating well but missing part of the game!

I'm having a small superbowl party.
one rack of pork spare ribs smoked
1/2 rack of beef back ribs smoked
deep-fried chicken drumsticks (ZFC)
grilled Rosemary & Lemon chicken wings

This is to serve 3 people, I think I'll be eating good leftovers for lunch all week

I got this thing happening by me where people just wander in with no warning, and they want 10-15 pounds of meat to take with them, I guess they think we have hundreds of pounds of stuff ready at any given moment or something.

I have zero reservations for the game right now, I ordered a little heavier than usual to compensate for my walk-ins who order big, and I fully plan on running out of product by mid-day.

If they do call ahead, they usually give us an hour. Nice huh?

Well we usually close on Sundays, but decided to keep the drive thru open for party orders. Got lots of wing an rib orders in advance and were going to be there prepping anyways so why not make a few $$$$. Yeah folks don't get how long it takes to prepare the meats ahead do they,,,oh well if it were easy everyone would be doing it wouldn't they....

Isn't that the real secret, it is pretty easy to smoke, just gotta have patience and know how to plan ahead?

I guess we will have to agree to disagree, I love to cook, it might be a lot of work sometimes, like when I host the family Turkey Day dinner, but I never consider cooking hard work, sometimes it's a lot of work, but IMHO, it's easy work.
