I have just finished trimming the skin off three shoulders in
preparation for tomorrow's cook. How do You marinate your
butts in their own cryo-bag and what do you use for a marinade. (If You care at all to share,that is.) Laughing

Do You rinse and dry after You remove the butts from the cryo-vac bags or apply rub directly after removing from the bags.

Inquisitive minds need to know, BBQMAN! Laughing Laughing Wink

Oh,and - Uh - Nope. no prize. Rolling Eyes

Nothing like asking a guy to give away his hard earned and guarded secrets. Razz

I can tell ya that you remove the meat from the bag.. shake, shake, shake.. and onto the smoker.... But if I told ya what he uses for the marinate I would have to kill ya right after.. and since I love ya like a brother.. that will have to remain a mystery, wrapped in side an enigma.. Laughing Cool

People not always want something on their butt, but when they do, they usually prefer just a rub.

I think this is what I've learned from this thread so far Smile I think I just derailed the forum

Whoa guys, not too many secrets here as my methods are not something that are hidden away like what the comp guys typically do.

I marinate in Mojo.

I prefer Badia brand by the gallon at the Hispanic grocers or GFS.

If you have access to fresh citrus you can make your own, there are plently of recipes out there.

Rubbed and slow smoked.

Mojo Criollo (Goya) ...Hmmm-Interesting! I have never marinated
butts(or shoulders) before. I would imagine it adds to the "bark"?

Anything else You might tell us about the merits of marinating your butt ( Shocked ) before rubbin, and smokin'

MOJO is the best IMHO when i do mine i add a little sugar in the raw to sweeten it up a bit. I've also added a little OJ reduced to a thick sauce and used it like BBQ sauce on butts and chicken it kills every time
