To directly answer your question....yes

Can you do what you propose legally???......no

No health dept will allow you to cook from home for resale purposes.

That's a practice you don't want to get into. To hard to cool mass amounts fast enough. Then there is always a quality concern.

Personally, you can cook the butts and pull them and cool them fast enough and it reheats easy and tastes good, I wouldn't recommend it with the ribs.

In Iowa, I can cook from home as long as my gross sales aren't over 20,000 a year.

You should check into that before you go ahead.
I'm in Iowa and it's a little more complicated than just your gross sales.

You could do it, but as mentioned not legally.

You will also find that a part time gig such as what you intend is not profitable considering the costs involved to do it right.

I'd suggest you get your feet wet with a few festivals- the rules are much less stringent, and it would provide you with a way to give cooking for the public a try.

That being said it could be done with the equipment you have and a few UDS to accompany, but you will probably want a bigger cooker.

I have property in north Georgia, and my lisense does not cover what they want there either.

JM2C for the day!

State of Georgia HD rules are pretty tough. You won't be able to do what you're talking about legally. When we started all we wanted to do was cater. By the time we put together everything the HD required we had a raunt. Laughing Laughing Laughing

You could probably legally cook for private functions as a "Contract Cook", but you can not legally sell on a per-item basis to the general public without proper licensing and all the prerequisites that go along with it.
I also do not think your current equipment will be large enough to handle much over 20-30 people per event. My first pit for catering held a little under 300 pounds, and it was a tight fit for many of our events the first season in business.

Do you have any personal commercial cooking history to draw from? If not, I would agree to work at a restaurant for a few months to learn the legal and professional end of it all on someone elses dime. There are some very important things that can/will be learned this way. And you might learn it could be too much to handle as your own business.

never worked in a bbq place so I think for me it would help a lot. I have no problem to cook for friends or family but I think trying to get into a good bbq joint could show the ends and outs of the buisness. My ultimate goal would be way later in life for me and the wife to start us up are on restaurant. now the fun part is going to find work in a place in this economy. I am hoping to get some good background with going to myron mixons school in march and cooking in the backyard for the family. thanks everyone.

Lots of good advice here. Not that you need my input but I think you've come to right conclusion. I've never worked in a raunt and can prove it by the number of mistakes I've made and money wasted as a result. We all pay our dues one way or another. Working in a raunt will get you a little ahead of the curve and help you make better decisions when the time is right.

One other benefit to working in a restaurant first, you might realize that the food-service industry may not be for you, before you go spending your hard-earned money to find that out the hard way.

You should also start researching proper food & labor cost ratios so you know how to price events and have a better chance of making a profit when you decide to venture out on your own..

i think its always been in my blood to work in a restaurant or around food. i won a scholarship in highschool to johnson and wales but made bad choices and didnt go. then i had the chance to be a head chef at a nice restaurant a few years later, now i have such a true passion around the grill and wanting to learn. But I think it will be good to get into a good bbq restaurant so I can see everything that goes on. Hoping to get in a place. I believe its Gods plan for my life. thanks again

One small word of advise. You might not want to go to a job interveiw and say "I want to work here so I can learn everything and open a place of my own!!!". Some folks (like myself) worked long and hard to get what we got and may not be so inclined to teach someone everything so they can one day be our competition. Laughing Laughing Laughing

On the other hand if someone (like yourself) called and said "can I take a look at your operation and ask some questions?" then some folks (like myself) would probably say "yeah, come on". Because even though we may have worked long and hard to have something we are also proud of it and sometimes want to show it off.

Note: I apoligize if the above makes no sense. Haven't slept much lately. Laughing Laughing Laughing
