My wife gave me a brinkmann gourmet charcoal smoker for Christmas. I did pretty much the same mods that day tripper did in his write up less the custom legs. First smoke I did a beer can chicken out of the BBq USA bible. I think it turned out well, some of the skin got a little charred maybe? Tasted great! My second smoke was Babybacks with slap yo daddy's rib rub. They were delish! Please critique my cook from my pics Smile

Nicely done, rygleason! Food looks fantastic!
Great job with the mods. I did day_trippr's mods to my ECB as well.
I added the legs too, just to raise the unit up, and no need for bricks,
which can be a little unstable, IMO. Confused
I liked the legs so much, that I fabbed the same ones for my Mini UDS. Very Happy

Everything looks great rygleason,chicken and ribs turned out real nice looking.....as for your pics they look great....but you better resize them before the Bear turns them into links....comfortable forum size is 640x480...that option is available in photobucket.

I turned the screen to my 19 year old son and said critique this - his response was, "make me some food just like that, make me food" Seems you made us both hungry - looks great! That bird makes me feel like dancing with it, right before I eat it!

Not sure on the iphone app as I am iphone illiterate....but there is a adjustment at the bottom of the upload page of photobucket you can tell it to always upload at 640 x 480 - chances are you will need to delete those pics from photobucket and re-upload, or the Bear's gonna get ornary and make them a link!

From what I can see, it looks great! Every pc of meat will take smoke different, every brand of coal or species of tree will affect it too IMHO.....camera's dont always pick up the subtleties either - that being said - if you was a a seriously bright red ring, add a little tenderquick an hour b4 smoking - it will be bright red!!! If it tasted good, you done did good!! Cool

I think you'll find smokin a butt to be very forgiving - the easiest pc of critter to smoke by far! I like the bone in butt, use the bone as the "pop up" gauge....when it slips out - it dinner time! If it wont quite come out and your crew is gettin hungry, wrap it in foil [aka Texas crutch] and it will get there quicker - I like to do the foil when it hits about 170°, and when it feels like a bag of jello - its done, and the foli bag is full of pork juices to pour right back over the meat after pulling!!!!Welcome to The Ring, and Happy New Year to you !!

Looks like you're definitely on the right track rygleason! Nice work on the chickie and those ribs. . . .

RE: the ring on the ribs. . . you'll get the hang of that soon enough (I tend to see better rings when I put cold meat on my preheated smoker. . . ). Experimentation is in your future! Smile Sure looks like it tasted great!

It all looks great to me, Id plate up to that anytime. Thats the great thing about cooking, you can always do your cooks again and again. I have made some bbq that I would consider "not my greatest" but there hardly ever seems to be any leftovers. I think you did a fine job! Good luck to you too! I ended up having to buy a different thermometer due to the one in the door being off by nearly 60 degrees, compared to the new one. And I was soaking my chips and getting white smoke >.< But I'll still post some pics in the General of how it turned out.
