Today I cooked up a Mexican omelet fattie. Using chorizo, refried beans, jalapenos, onion, potato, bacon and tomato.
Here is a start.
Cooking out the chorizo grease.
Cooking potatoes.
Refried beans.
Omelet ready for folding.
Fixing to marry 2lbs of sausage and an omelet.
Wrapped and ready to chill.
On the kettle with a little Oak and R/O charcoal.
After resting and ready to slice.
Sliced and ready to plate.
Plated up with some leftover taters, beans, quick pico and flower torts. I received some of Big Orson's salsa's the other day and could not wait to try it with some chips. His salsa is most excellent and explodes with flavor it went very well with the fattie.

Looks great Kevin - I've been trying to think of a kind of fattie I can vend, that would hold well in a steam table or under a heat lamp - not sure one with egg would work - but I would love to have you share a slab of that one with me and discuss the possibilities  _________________ Money Maker
