I've been fooling with summer sausage for years with venison, I made it great once (by accident) and was never able to re-do the same thing, it always turned out dry and crumbly, no matter how much pork I added.

Well thanks to reading all the posts in this forum, I followed you alls advice and nailed it this time.

I learned my major mistakes were not keeping the meat or fat cold enough during grinding, bringing the temp up too fast while cooking leading to having the fat/moisture wick out, and not soaking in an ice bath after cooking.

I also added an once of #44 meat binder I learned about on here and the sausage and snack stix came out perfect.
