...The "Great Sausage Recipes & Meat Curing: 4th Edition" and "The Art of Making Fermented Sausages". Written by Kutas and Marianski respectively.
Got some reading to do before Christmas gets here as i think the wife might be getting me some sausage making equipment. Should round out the curing meat books along with the Charcutirie book that i already have.

I have them both, and will say they are great books. I will also say that I prefer the books by the Marianski's as they offer much more in the way of why a good sausage is a good sausage, not just recipes. Kutas' book is very informative mind you, just not my go to guide Wink
