Fall has fell in the upper midwest....broke out my carhart and plow hat - currently 30 mph wind gusts and 50° in the sun - yea, a little overkill, but I've been sick....

just to go blow leaves away from the smoker [ they were almost 2 feet deep near firebox! All so I can start another hamster hog [51 pounds this time]

[ that is a very big cooler] at o-dark-thirtry tomorrow - serving at 4 pm, but with forcast as it is, I'm giving her plenty of tanning time! Were expecting about 38° and 30 MPH winds overnight into tomorrow...
I decided to try my basket with charcoal to start, with some hardwood to follow [ found 8 bags of blue K in the back of the garage]

and see how it goes Embarassed Confused I have used it with logs, but dont recall trying a long burn, and definitely not on a pig.
Pig was injected at butcher with a mild solution that includes soy, apple juice and some other basic seasonings - tends to not add a lot of flavor [ a good thing in my book] just a little salty sweetness, and it makes the cooking very forgiving and difficult to dry the pig out.

Mr T, that is one fine looking piggy ready and waiting there. Look forward to watching it put it's tan on Cool I guess our cold weather is the end of next week. Low 30's for lows, but none of that wind thankfully Very Happy

Not sure what you were thinking in posting that head shot bro, Kevin is 600 miles away from me and I can already see his photo shop account smoking and overheating from here.

Got my Carhartts at the ready, too, and a fresh coating of waterproofing on my boots. Though I am waiting for the wind to blow the leaves over into the neighbor's yard. Shocked Twisted Evil

43° and 30+ mph winds, but pig is on!

A little nervous with the charcoal basket and all - gonna be checking temps often!

Basket seems to have been a good call - adding 1 log an hour to the charcoal, Lang is holding 225° like a champ!

Didnt take any fancy pics....again....cooked for 12 hours closer to 200 with a few spikes due to high wind shifts Evil or Very Mad

then covered with foil and rested 45 min or so waiting for the birthday girl to arrive[ 40th] . It really turned out fantastic!! Steamed when I cut the skin!

Due to weather, we served in the spare room off the kitchen - the girl the party was for was truly surprised, maybe just a little drunk, and puttin down some pig!! Hopefully her brother forwards me some of those pics as promised Embarassed

yea, I guess I am the hamster King....lol
This little piggy fed the 35 or 40 with ease! Originally they said 30-35, but we all know how it goes .....so I got the 51 pounder! They may even have some leftovers for the week - depending on how much pickin went on as the beer kept flowing!! I left after the main feed, have to pick up m
y rack and misc today [ just down the road, so not a big deal]
