Someone told me the other day that out of the last five weeks we have had only two days without rain! I have been wanting to do a dozen things around the house but with rain and travel I have not been able to get to them...until today! Man, it felt good to knock out my list and git-r-done. It started this morning with me and Toot doing a dump run. I had some stuff I've been wanting to take to the landfill for a long time. Then had to stop my Chick-fil-a for breakfast..Toot's fav. Then to the hardware store for odd and end parts and light bulbs I've been meaning to replace for an even longer time. A stop at my cigar store for some sticks. Then home to start enjoying the day doing stuff...me and Toot. It was a beautiful day in the low 70s.
My Honey made up a batch of stuffed meatballs for me to smoke while I was working outside. They smelled great cooking.
A short couple hour smoke.
I had not had an opportunity to clean the smoker from the last pig I cooked THREE weeks ago! Man when I popped the hatch on that thang the stench was beyond horrible and the crap growing in there.....lesson learned. I used a power washer for a good hour. The WSM is chugging with the meatballs.
One of my fav t-shirts...it says.."The words you are looking for are Yes Dad." Ha!
New valve on the smoker...sent to me by a very good friend! Thanks brother!
Sauce getting ready for the smoker.
About half way in.
Done and ready to come off.
Time to blend the flavors!
Homemade apple pie!
Slim making the garlic bread.
Green stuff.
Plated goodness! Man oh man the aroma in the house is soooo nice!
Smoked Stuffed Meatballs
8 slices quality white sandwich bread, crust removed and bread torn into small pieces
2 cups buttermilk
3 pounds 85 percent lean ground beef
1 pound ground pork
1 cup grated Parmesan cheese
8 Tablespoons minced fresh parsley leaves
4 large egg yolk
4 medium garlic clove, minced or passed through a garlic press (about 1 teaspoon)
3 teaspoon table salt
1/2 teaspoon ground black pepper
Mash the bread and buttermilk to a smooth paste in a large bowl. Let stand 10 minutes.
Add the beef, pork, cheese, parsley, egg yolk, garlic, salt, and pepper to the mashed bread; stir gently until uniform. Gently form into 1 ½-inch round meatballs (about 56 meatballs). When forming the meatballs use a light touch; if you compact the meatballs too much, they can become dense and hard. Place a cube of cheese in center and form meatball around.
Smoke meatballs with several small pieces of Hickory at 225-250 for 1.5-2 hours depending on size.
Notes: The shaped meatballs can be covered with plastic wrap and refrigerated for several hours ahead of serving time. |

That looks great! That is my meatball recipe except I add some oregano too. _________________ Never met a cow that I didn't like with a little salt and pepper.

Yep, Tony I have one of those scrapers too just didn't get to it. Man oh man that was a mess. But she is cleaned up, warmed up and oiled down now...ready to rock.

CB, how about those Skins, bro! The Dream team is 1-3 and may go to 1-4 today playing the Bills. Dallas is imploding with a choking QB, and the Giants are doing better but Eli can go south in a hurry. And the Skins D is keeping us in the game when Bad Rex shows up. Nice to have some offensive weapons though. Hail to the Redskins!

I love that line.....when Bad Rex shows up It is nice that the skins offence is showing some promise....I hope to see some more good things come from Tim Hightower....I actually bet the Skins to win the NFC East...could bring me some nice dough on a small wager that I placed before the season started....we need a win over Philly next week.  _________________ Horizon Offset (Marshall RD Special)

CB, that was a ballsy bet! I hope we take the NFC East....it's ours for the losing right now bro!

My Honey uses the recipe below as a base and plays with it from time to time.
Meg’s Spaghetti Sauce
Put some olive oil in pan. Sauté garlic (however much you want) over low to medium heat for a couple minutes I added crushed red pepper flakes at this point too.
Then add:
28 oz can Crushed Tomatoes
1 can Diced Tomatoes
1 can Tomatoes Sauce
1 Can Tomato Paste (more if you like thicker sauce)
Then add spices: I measure this by pouring into my palm a little more than quarter sized in center of my palm for each spice.
Oregano
Basil
Italian Seasoning
I also added a smidge of rosemary
Also add a couple tablespoons of sugar and some salt (1-2 teaspoons)
Let simmer on stove until ready to serve or place on smoker after meatballs have been on for 45-60 mins for the remaining hour.
That is it. |

Dan.....as you know the Giants just lost(knocked me out of a big suicide pool )and Philly lost as well, Boo Hoo...we get a Philly win next week and we can steal this thing.
I bet the skins every week...no mater who they play...so you know how well i have been doing the last few years.
