| This is my first event. This is my menue. Pulled Pork, pork ribs, leg qaurters, smoke sausage, and beef brisket. Sides: cole slaw, potato salad, smoke corn, and beans. This event has been advertised in the newspaper. It is a charity event that the chamber of commerence. Do you guys think this is too big of a menue? The promoter said 5k attend and be ready to serve for 1k people. How much should I cook? There will be a total of 6 bbq vendors there. |

Wow, 6 bbq vendor's that does sound risky..I would think long and hard if it's my first time out..at the very least chisel that menu down.

When I vend at a high volume event I keep it simple.
Pulled pork sammies with fries or slaw as sides, only
drinks are Coke, Diet Coke and water. As far as how
much to make that's hard for a first event. Make enough
to cover a days wage and keep track so you can adjust
for the next time you do this event. But as some one
has said before It's still a Crap Shoot.  _________________ Curt

| I was just emailed all vendors menu. You guys are right my menu is too big. One vendor is just selling beef brisket, pulled pork sliders and ribs. The second is bbq pizza and pulled pork sandwiches. The third vendor is selling pork shanks and bbq wings. The forth is selling pulled pork, chicken, and ribs. The other vendor has not turned in his menu yet. Now I'm thinking pulled pork, ribs, beef brisket, and maybe chicken. Sides: just cole slaw, baked beans, and smoked corn. What do you guys think? I would do PP or maybe pork loin and ribs and chicken only,beans and coleslaw,the corn to me is iffy.Is this a BBQ event?if not you'll be lucky if you get 150 customers. _________________ Good BBQ is all smoke and beers!
