Last night, as a last minute dinner, I decided to use some of the vacuum sealed pulled pork we had in the fridge. I grabbed a can of baked beans and combined the two in a pan on the cooktop and added some BBQ sauce. I also sliced a yellow onion and let it cook down and caramelize in a pan. After those were going for a while, I started a pot of boiling water and added a bag of extra-wide egg noodles.

Once everything was done, plated the noodles and topped with the pulled pork, BBQ sauce, baked beans combo and then topped that with the onions.

My wife said it reminded her of Beef Stroganoff, but she said it was really good. Simple meal to make and goes a long ways as we have lots leftover to use for another dinner and a lunch.
