Been wanting a WSM (18.5") for a while. Last weekends brisket cook, on the offset, sealed the deal. I guess I'm just getting too damn old to feed the fire every 1-2 hours for an overnight small cook. So I ordered a 18.5" WSM and it came today. Put it together and fired it up -
Cut a piece of stainless expanded metal for the charcoal grate.
Loaded it up with about 7lbs of RO lump with 5 big chunks of Hickory buried
Put 1/2 lit chimney in the middle
Smokin!
Been holding 230-240 for 2 hours so far. Gonna put some chicken leg quarters on in a while.
I also put the temp gauge in boiling water and it read 210. Isn't that weird???  _________________ The Matt Ryan of LIARS! (#2)

Leg quarters rubbed with a mixture of -
1 cup Big Ron's ITH
1 cup BR's HOH
1 teaspoon Devil Dust (Thanks Canadian Bacon!)
Temps pretty consistant!

All done. Glazed with Roxy's Mustard Sauce. Tastes pretty damn good!

BUGSnBBQ....congrats on your WSM....chicken looks great,very nice way to break it in.I don't mind feeding my offset it the summer time when I can kick back in a lawn chair,It's the winter time that sucks,thats when im off work and use it the most......hence my excuse for buying my BGE.  _________________ Horizon Offset (Marshall RD Special)

the first couple of cooks temps will be all over the place once it gets a coating inside thing settle down and temp control is a breeze .
throw a pork butt on there to get a good coating on the inside
like mike said wrap that pan in foil and when ya need to clean your grates I flip a plastic trash can lid over fill it with hot soapy water throw my grates in let them soak for a while the just wipe down and hose off shazam just like new.
on both my wsm,s I took one of the bolts that hold the grates up and drilled a hole threw the center for my temp probe work great . _________________ 1 bad azz d.o table

Gray Goat - Thanks. My first cook went so well because of all the good advice available on here. I did my research before buying one and couldn't be happier
Canadian Bacon - I still love my offset too, it's just that last brisket kinda wore me out after 18+ hours. I like my sleep . And thanks for the jpeg, it looks friggin awesome!
Mike Lawry - Thanks! I'm gonna try the foil on my next cook. Should have done it first (what a mess I made with the sauce ), but was so excited, I forgot.
T00lman - I didn't have any problem controlling the temps, but it was a calm night. Good idea about drilling for temp probe. I'll do that when I put some handles on the side. Thanks for your advice!

Looks great Bugs! You can hold temp for 12 - 18hrs or more when dialed in! I think you will really enjoy smoking on it!! _________________ Vertical Offset

Riskdude - Thanks! I enjoy coking on this already. Fired it up again last night for some giant squash. Same results - was still humming along @235 when I went to bed, 10 hours after lighting.
