put some ribs on the smoker / turned out o k / keep one with just dry rub and sauced up the other with some sweet baby rays / did the 3-2-1 method @ 225-230 / overcooked them a little / should have done 3 -1-.5

Yeah, I get them a little dry sometimes, too !!!
That 'spray bottle w/ apple juice' thing that folks talk about here really works.... some people use apple juice & apple cider vinegar.
I spray to coat a few times in the last 1/3 of the cook & it seems to help keep them moistened up....
You do the same thing I do: some dry only & some wet cooked or glazed.
Look like pretty meaty ribs, man ....
