This bird was about 3 lbs.
This is my lazy marinade. It's very good for chicken.


I used 2 bamboo skewers in an X pattern.


Used just a small stick (branch piece) of apple wood.
Was not going for a super smoke flavour.


After 40 minutes on the indirect side.


Then 5 minutes skin side down over the coals.
Then 5 minutes skin side up over the coals.


Back on to the indirect side to finish up.
I salvaged some coloured peppers that were on the way out.


Boiled some taters, then fried in the CI pan.


Plated.


I messed up on the potatoes a bit.
I wanted to get them crispy, but got mushy. Confused

I like chicken done this way - very simple and very tasty. Smile

PS: I'm sending a torch hose along as it's taking me too long to get the rest of the stuff ready......
Will send a whole 'nuther unit along w/ the rest of the stuff........

Great looking bird and plate Mac.
Gonna have to try you method of spatching with skewers. I like it.
