Orange Peppered Round Roast

Want prime rib but you are watching your salt and fat intake? Then you should consider this great alternative. Round roast is normally leaner that prime rib and with these seasonings, the amount of salt is greatly reduced to a nominal amount. What you will end up with is a dish that is moist, tender and seasoned just right.

Ingredients:
6 lb. Round Roast
2 tbsp. Orange Pepper (mix of black pepper and orange zest or peel)
2 tbsp. Mrs. Dash salt substitute
1 tbsp. Smokey Mesquite seasoning mix.




Mix all of the items into a bowl and rub over the entire round roast. Make sure you cover both ends (but you need not cover the fat cap.)


Once the meat is seasoned, place in a pre heated smoker set at 225 degrees. Place the meat fat side down for one hour in order to allow the spices to “set” so they won’t fall off when you flip the meat.




After the initial hour, flip the meat so that the fat cap is up. This allows the fat juices to drip over the meat and keep it moist during the cooking process.



Once the meat had reached approximately 145 degrees internally, you may pull the roast from the smoker. Cooking time is dependent upon the smoker and temperature but is normally ˝ hour per pound. Once pulled, let the meat rest for approximately 30 minutes to allow the juices to redistribute themselves back into the meat.



This dish is meant to be sliced very thin and served with horseradish or wasabi.
