I live in south Texas, Hidalgo co.
Let's set some things straight
Never heard of King Ranch Chicken.
Doubt any of the Kleberg's have cooked a day in their life,

I did one yesterday, smoked the chicken, the put it all together in a 9x13 pan, covered with foil and back on the pit. About 225 for 2 hours, uncovered last 20 minutes. Didn't think this would still be on the first page. I've been on vacation for 9 days so I haven't been checking in. Thanks for all the kind words.
King Ranch is the largest working ranch in Texas.
As far as I could find out, King Ranch has no affiliation with King Ranch Chicken. It was not created there, nor do they know where it was created. Actually, I couldn't find any info anywhere that claimed to know where it was created. _________________ www.griffinsgrub.wordpress.com |

I made this today, except it was in the oven
and I used some left over grilled chicken. It
was really good, next time I'll use smoked chicken,

We've been doing the same dish for years but using Nacho Cheese Doritos in place of the tortillas. I'll have to try it with the tortillas.....that should cut out some of the saturated fat.  _________________ http://kchawgskitchen.blogspot.com/
