Hello,
Wasn't quite sure where this would fit, feel free to move if neccesary.

As mentioned in my introduction post, St. Louis style ribs are my favorite preperation. Earlier today, I prepared seven racks (3 for friends, 1 for neighbor, the balance go to my kids). It is an absolutely beautiful day in west-central Minnesota. The leaves are beginning to show a color change, and cooler temps make for great barbque. Following several hours of good smoke, I took advantage of the remaining heat and hickory to see how a sirloin steak might taste smoked.

To my delight, we have a Winner! I was simply amazed as to how well the steak carmelized outside, and the flavor is, well, out of this world.

For your viewing pleasure, I present.........Sirloin Ala Hickory with Broth.

looks over cook for my taste, but the flavor must have been unbelivable just by reading/looking at it.

you serve me that, i make a quick comment about being over cooked, and then i eat the whole thing with drippings all over my face and shirt.
