I have not done a lot of BCC as I have been smoking them in different ways and since I got my first grill in almost 10 years I have cooked a couple 3 or 4 of these and the wife and I enjoy them a lot.
I coated the yard bird in veg oil and applied a good coating of cajan rub. Once I start to get rendered fat in the pan I used it to spoon over the chicken every 10 minutes or so. The skin was real crisp.
I had the two out side burners on high and the two inner ones turned off. _________________ Chargriller Akorn
