When the tri tip is done, do you wrap it, stick in a cooler to rest (if so how long) or can you slice it right away? Thanks.

I cook mine to 130 degrees then loosely cover it with foil (tenting) and let it rest on the counter for 10-20 minutes before slicing.

I foil mine the last little bit of the cook and then I let it rest 15-20 mins before cutting.

Pull it, on to the cutting board, foil over the top, kitchen towel over that, and salivate for 10 minutes. Wink
