It's a beauty of a day here in Central Massachusetts, blue sky, mid-80s, moderate humidity and a gentle breeze. A fine day for policing the gardens this morning and some Q'in' and sippin' all afternoon!

Lightly trimmed a fresh rack of spares last night, got 'em all rubbed up and chillin' overnight. Just got the wee cooker up to speed with nice blue smoke and loaded the rack.


Another 5 minutes and I'm hittin' the keezer and doing my elbow exercises Laughing

Sounds like a great day a Man, a Smoker and a qt of 12 yr old Single Malt. I'd be happy to trade you the weather it was 110 yesterday and its 105 in the shade on the front porch now.

day_tripper you can't beat a day of milling around in the garden followed by firing up the smoker and pouring down some cold ones. Enjoy your day and save some cold ones for when those spares come off.

You are correct, sir! Very Happy

No worries about saving some cold ones...

There's the better part of 20 gallons under the hood. The bigger problem is pacing myself so I don't snooze through dinner! Very Happy

So, three glasses in (that would be three hours in Pacing Time)...

...I decided to break out the crutch. But instead of my usual AJ I'm using a quarter cup of Imperial Honey Stout. I have no freakin' idea how that's gonna work but what the heck - I am three beers in Wink and the stout on its own is wonderful, so what the heck, it prob'ly can't hoit!

Back in the humble cooker for another 90 minutes or so.
The little fella has performed beautifully today, zero drama so far...

Headin' out to terminate the Japanese Beetles marauding my hops, the li'l bastids!

Well, I'm not seeing anything different about the ribs with just the quarter cup of (actually, pretty darned black) stout. They smell wicked pissah good, though Laughing

Major pull back going on here.

Anyway, the rack is back on the humble smoker for an hour...

...while I whip up some corn bread and a fresh garden salad.

Ok, I'm officially going to Hell. While my wife had her usual three ribs, I totally killed the rest of the rack! Woof!

Cranked up the fire and sizzled on some doctored sauce...


...and plated my first helping.


Then went back for more of everything...twice. Ribs gone, salad gone, corn bread nearly so. If I had to move quickly right how I'd just run up the white flag instead...

I couldn't detect the stout in the mix with the rub and sauce, so I reckon it'll just be for drinking. I can live with that Very Happy

fwiw, I used a mix of apple and cherry chunks. It's a good combo for porky things...

day_trippr, awesome job on the ribs they look delicious. Very Happy For a minute there I thought you were going for my all time favorite dry ribs but the wet ones look amazing. Very Happy I love the plate up with the cornbread as well. Nicely done my man. Very Happy

I can never find ribs that look like that at any grocery store.
Would have to go to a butcher and get lucky. Confused Shocked Wink

Thanks for the kind words, gentlefolk.

k.a.m., my boys are dry smoked mavens, but I enjoy experimenting with sauces - and I really like the look of a nicely caramelized sauce (so pretty! Wink)

I actually came close to an epic fail on the sauce, though: I was doctoring up a blend of bottled sauces and added a full teaspoon of my own powdered jalapeno to about a cup of blend. And quickly rediscovered that powder truly is weapons-grade material. I mean, I love heat, but I had to keep my mouth full of beer for like a half hour before things got under control Shocked My wife wouldn't have gotten to a second bite. Not good.

So I mixed up another batch and added just a couple of tablespoons of the first batch to it which was just about right, so tragedy was averted. It's gotta be a bitch to scrape caramelized nuclear sauce off a rack Embarassed

I'll keep the first batch in the fridge and use it like you'd use any other "wicked friggin' hot sauce".

MacEggs, you're right! btw, those actually are supermarket racks, I get them at a Market Basket about a half hour west of me, they always have nice fresh spares for sale. I've never found them anywhere closer, and that's covering a lot of stores.

sparks58 and Tug, thanks for the kind words. It was too tasty to not finish off, though it's gonna wreak havoc on my youthful figure Laughing

Four of those faucets have beer behind them in five gallon Cornelius kegs. I'm guessing as of tonight there's around 15 gallons that hasn't been consumed yet. I have two more 5 gallon brews in the final stages of fermenting and should be ready in a week or so, then all six faucets will be loaded just in time for the dog days ahead. It may not be Utopia but it's close enough for me Very Happy

So...one more of those Stouts and it's off to bed for me!

Thanks! And you might surprise yourself.

I have discovered and totally proven a corollary to Parkinson's Law: the more beer you have on hand, the more you will consume.
The ramifications of this discovery require that I work on self-denial and try not to hit the faucets before 5pm. The viability of this effort is unclear at this time Wink

That is cool! Around here there's a push to cover large rooftops with solar panels - even though we're kinda north latitude wise for high gain through the full calendar. Hops, otoh, will grow just about anywhere - as my front yard will attest (I got cones! Yay!) Good for those guys!

Thanks! The spousal unit is always happy when I cook up the whole dinner. She's even happier when it comes out tasty!
