Hello folks. I've been lurking and reading all the posts in the Vending and Catering forums trying to educate myself. I'm pretty good on the pit, love cooking Q and the wife and I are pretty good with events and feeding large crowds.
I'm familiar with all the HD requirements, read what feels like 100's of posts on estimating portions and studied commercial smokers, etc.
The reason for my post is that I found an online magazine that I thought might be helpful to those already "walking the walk". If you care to take a look it's http://mobile-cuisine.com/.

Thanks again Gunny and thank you Ranger for the link.

Unfortunately I'm in Chicago for the time being which has the most restrictive regulations in the country when it comes to mobile food service. Everything has to be prepared in a licensed kitchen and pre-packaged for mobile vending. Nothing can be prepared on site. Catering Q in the city would be next to impossible. Not sure just where you'd set up a smoker on a city street much less store it. Guess catering Q will have to wait until this country boy can bust a move and get back to where the wildlife has 4 legs instead of 2.
In the meantime I've been thinking about vending Po Boy sandwiches from a truck on the street. I have to run numbers because a commercial kitchen is $25/hour plus all the other expenses that go into this business.
