The internal temp was 195, I had made a decision at 190 that it would either be 5:00pm or 195....whichever came first. At 5:00pm with and hour and half in the cooler wrapped that would put my entire process at 12 hours.

It was a good thing 195 came first, I literally pulled the meat from the smoker and it was sprinkling.....15 minutes later it was a monsoon. Very Happy

Had a blast and you guys on this forum were great with advice as I prepped and worked through the process.

I like the way you left it in larger chunks. To often I see it chopped up to mush or shredded real fine.
