My landing at the side of the house was too small.
It's a great location - sliding doors just off the kitchen.
Here are some stock photos from about 5-6 yrs ago.
I could just squeeze my gasser and ECB on it.
With my recently finished UDS and
recently purchased Weber 22½" Kettle,
It needed to get bigger!
Pulled a frozen chicken the night before (about 3½ lbs).
Quartered it and brined it for 2, maybe 3 hours.
Brine was 2½ Litres of water and ⅓ cup Kosher salt.
One breast and wing I left naked without any rub.
The other breast got this. It's very good with chicken.
The two other quarters (drumstick/thigh) got this.
I brought this home from Barbados. It's very hot!
I decided to placate the ECB as it was feeling neglected.
Three pieces of apple wood.
Pretty much 2 hours later, it was ready to come off.
It may look burnt, but didn't taste burnt.
Plated with some rice and locally grown fresh green beans.
This was an awesome meal!!
Thanks to Hell Fire Grill for the inspiration to make a lump charcoal sifter.
I used a small amount of lump (very small pieces),
and lit 15 briquettes and scattered them on top.

nice job, i use that kirklands its awesome easier to control salt content. ok personally i think so. anyway i like the line up of the soldiers. well done on the deck. time to parrrtttyyyy althou i would water proof that motha..  |

Nice lookin' deck MacEggs. As mentioned get a sealer on that baby. Maybe 2 or 3 coats to start.
That yard bird looks great. I'm gonna hunt around or order some of that jerk. I can't find any good stuff around here.
Where are you gonna put your BGE, 22.5" WSM and Rancher kettle at?

MacEggs, I love your set up that is very nice. Your yard bird looks delicious, I love jerk chicken. The plate up looks beautiful. Nicely done my man.  _________________ Always remember slow and steady wins the race.

Thanks everyone for the kind words.
brdprey: that seasoning really lends itself well to chicken,
especially since some salt comes from the brining
Jarhead: I still consider it a "landing".
Ultimately we want a patio out back.
Right now it's too hot to sit out back.
When it does come time, the mosquitoes come calling.
I brought that jerk seasoning back from Barbados in February.

Oregon smoker: I really like this seasoning with chicken!
Here's the ingredients in order (each one says organic):
onion, garlic, herbs {?}, carrot, black pepper, red bell pepper, tomato,
spices {?}, orange peel, lemon peel, red pepper, citric acid.

I have some that Kirklands Organic no-salt seasoning here, I kinda like it myself, it seems to go pretty good on almost everything with the exception of a meat loaf I did, it had a somewhat off taste but I'm still not sure it was the seasoning,the meat (which didn't have a bad smell) or the onion soup mix, but yeh, all in all it's pretty good. Nice looking addition and tasty looking chicken as well. _________________ WSM 22.5 - Chargriller Pro

| Very cool, and food looks great. Ok so at the risk of catching it all around I am going to ask a very newb question what does UDS stand for I know it is the 55 gallon drum type smoker but never have known anyone that actually has one or been around one and curious what the letters stand for. |
