20th anniversary of the first Meatfest (only my 3rd). For those who saw my MeatFest 2009 thread, some of this may be repetitive.
Here are a few shots of the cooking deck. You will see 2 gasser grills, Stainless steel sink, smoker (gas AND/OR wood, more on that later) oven, flattop and Hobart slicer.
The smoker is a hybrid and was finished the day before the event (talk about last minute)
This used to be a gas smoker. George (our pitmaster and host) wanted to smoke with wood so he plumbed the exhaust of an old wood stove to the back of the unit:
This bad boy rocked! With a good fire going and the baffles fully closed the smoker held at 230F plus or minus 5 degrees. With the baffles open, The smoker hit 500+ and could have been a good pizza oven. The only thing that hurt its performance was the rain. That killed the heat and required some help from the gas burner.

This made Sunday AM a pain getting everything ready to go bu the storm let up just as the event started around 3.

Only 30 or so folks showed due to the weather (50 plus normally expected) and there was a boatload of leftovers but George had another event on Monday for his Mason Lodge so all the leftovers and another brisket and 4 racks went off for that.

Heh Heh,
What an amazing event! Your not kidding about the "Money Shots". I love that wood stove smoker and will have to play around with that design. Up here in the mountains of SoCal you can locate old "abandoned" wood stoves pretty easily. _________________ DPP FAT 50

The stove has some history to it. It was originally purchased to heat the home. After a fire a number of years ago, it was too damaged to use safely, too costly to repair and so the house was 'updated' to a coal stove and the wood stove was put in storage. A few months ago, George first floated the idea of hooking it up to the gas smoker and, as is the case with all these kluges, it was finished the day before the big cook.
