The FDA has finally given in to the scientific world and has lowered it's "DONE" temperature for turkey to 165 from 180.

The FDA link says that if you buy a fresh turkey (not frozen) to buy it no earlier than the day before you are going to cook it.
My grocer said if I bought one it would be fine until 11/27 (well after Thanksgiving).
My fresh turkey I bought on Saturday is in a cold fridge right now and will be cooked on Thursday.
Do you think I'm ok?  |

'The FDA's litigation lawyers probably wrote their time frame, making sure that there wouldn't be any chance of getting sick that way. The grocer probably said his statement from experience of years past. I'd say just keep it as cold as possible and you should be fine.

I often have more to do then can fit in the fridge. I pack them totally in ice in large coolers (not just on ice, but totally covered top to bottom), and they stay super cold until needed. Of course those coolers get throughly washed and then bleached after the turkeys go into the smoker!  _________________ BBQMAN

Where did you read the new temp guidelines? I just visited the FDA website and it still says 180 for the breast and 165 for the stuffing. I don't mean to be a pest but but if I have to go on dialysis I want to be able to sue the hell out of the FDA. Of course, if this get rich scheme does'nt work then I can go back to chinchilla farms.
