That is not what I was trying to say. When a side is inspected, not every cut gets eye time for the grading.


You are right Roxy not evey cut is looked at, cattle are gradded as a whole if one side is choice the whole carcass is graded choice by the USDA graders. This is done by evaluating the marbling charicteristics of the ribeye and overall age of the carcass there are 8 grades but most people will only see the top three, Prime, Choice, and Select. Sores dont want to show the rest of the the grades, most of the rest end up in processed products.

IMHO quality of meat is huge no matter how you are cooking it. They only thing I have ever used select for is when used in stews, crock pot etc. But when it comes to anything else, I use choice. When I get to feeling wild & crazy, I go premium especially for new yorks and filets.

Fortunately our local Costco carries a good selection of both and a local supermarket chain here (Frys) carries a lot of choice and they do pretty good sales so I load up then.

I smoked a total of 5 briskets over the 4th, all on my UDS at one time....did 3 select and 2 choice...couldn't tell the difference....they were all spot on. No complaints from my customers either. Briskets here recently have been $1.49 per pound.

Thanks for your post BigPhil. I also have cooked both side by side and could not really say one was better than the other. I've alsod cooked two choice sided by side and one turned out great and one not so good. Tom

I replied earlier saying that the Choice turned out much much much better. I didn't do anyting different that i had done the previous three times, only thing i did different was use Choice instead of Select.
