Hey all..I just received a brand spankin new 18 1/2" WSM for Fathers day (yes, I have the best wife/kids ever) . I've been using a CharGriller Smokin' Pro for the last 5 yrs or so and it's good to finally upgrade!!!
Just one question..What's the max # of St Louis Ribs I can do comfortably on the WSM? And what method works best, using a rack, or coiling them up? I'd like to be able to fit in 10 racks if I can
Anyhow, I broke it in tonight with a couple fatties, hence the pron

1st show. mid 80's, maynor downs horse racing track outside of Austin, TX. it was a 3 day party with anything you can imagine available to party with. the dead heads just came from red rock out west and we spent 3 days listening to the red rock recordings. then we went in for the live show. the couple I was with got split up. I was with the girl and she passed out and I spent the show watching over her. in the end the security picked her up and dumped her outside the gate. she woke up when she hit the ground. I had fun. they didn't. well they had too much fun, I should say.

2nd time was at 6 flags in houston (Astroworld). that was a bunch of wannabe's with crisp, clean tiedye shirts with the creases still in them showing they were just bought. it wasn't the same. maybe the lack of "a higher spiritual trip" was the difference.

I listened to the dead many years before that and never got it. you had to see them live to really get it.

Welcome aboard SmokinDeadhead.
I think the only way you will even get close to 10 on it at one time is to coil them. This is on a 22-1/2" UDS and I think I had 12 racks on it, IIRC.

rib racks will help. I think I have seen some one get 10 or 12 racks before using them

Nice work! You can always count on a deadhead to smoke up some nice fatties. What were you listening to while breaking in the new smoker?Blues for Allah, Terrapin Station, Shakedown Street ???

On way to get more room for racks of ribs would be to use racks that hold the ribs vertical (plenty of them around at places like Home Depot or Lowes) or take a roast rack and flip it upside down (as long as there is no bar at the bottom of that rack).

Another thing to do would be buy more 18.5" grills and after dropping in the first grill and loading it up, put in some spacers (empty veggie cans) and then another grill and more racks of ribs and then another grill and more spacers as needed. I am sure you could get 3 grills in there that way, don't know if you could get 4.

Thanks for all the responses. It's good to see some of the Dead family around. My 1st show was 6-30-88 @ Silver Stadium in Rochester. I got to them a little late, but I still managed to see them about 45 times before we lost Jerry. I moved on and still like to see Phish when I can, but it's just not the same Smile

mostly live stuff for me, but in all seriousness, I listened to some Bob Marley while I broke it in..Summer always gets me in the mood for reggae

The main reason I want to do 10 racks at a time, is I do a lot of camp cooking for friends/family when we go camping in the summer. I like the idea of adding a 3rd grill surface and think I'll go that route along with the Weber racks...can't wait, I'm doing a couple butts on it this weekend.

Bunch of damn hippies....

I've seen em a few times, but the best show ever been to was at UNLV Stadium in '90 (91?) when Santana was the opening band and played for over 2 hours, then the Dead played for another 3+ hours. Chemicals included. Was good times, but now I'm getting a bit too old for that kinda stuff Wink Laughing Laughing

And like Jarhead suggested, try coiling them up.
