Hey, Roxy...
Am studying your cajan turkey recipe... In it you mention (along with a few of your other recipes) a "cajan rub" you use.... Yet I can't seem to find a recipe for this "cajan rub"... I know from enough of your posts that you generally don't use "store bought" rub, either...
Is your "cajan rub" a secret? Or can/will you share it with us?

I tried Roxy's Cajun Turkey and PM'd him about the "Cajun Rub". He wrote back and gave me the recipe. Here it is.
Roxy’s Cajun rub
2 1/2 tbsp Paprika
2 tbsp Garlic powder
1 1/2 tbsp. Kosher Salt
1 1/2 tbsp. Black pepper
1 tbsp. Onion powder
1 tbsp. ground Oregano
1/2 tbsp. ground Thyme
1 tbsp. ground coriander
1 tbsp Cayenne pepper
Mix ingredients together well and keep in a dry place. |

How did your "Cajan turkey" turn out for you, if you don't mind me asking? Any of Roxy's recipes I have tried have always been pretty darn good (Alien's, too, for that matter!)...

Thanks for getting on that one Bob, a little slow on the draw today.
Hope if all works out for ya. My wife has stated that I have to do holiday turkey this way from now on and since she's the "really big boss"...
Dont be skimpy with the injection as well. Oh ya give it a good coat with the rub as well...

Yes I have and it still is good stand by for when I am out of my rib rub and don't feel like making it.
If you like more heat to it just up the cayenne pepper to 1 1/2 tbsp or 2 if your feeling brave..  _________________ Chargriller Akorn

Roxy or anyone else,
What would you use for wood? I'm doing two turkey breasts, one that will have a dry rub and will be basted with butter and maple syrup, but I'm using 1 chunk of apple and 1 chunk of maple. Would these wood chunks work with your cajun rub as well? _________________ "Don't let yourself get attached to anything you are not willing to walk out on in 30 seconds flat if you feel the heat around the corner."

Both woods will work perfect with Turkey IMO. They are mild which is perfect for any poultry. I hope you find this rub as good on your bird as I do.. I rarely cook chicken or turkey without it. _________________ Chargriller Akorn

Roxy you have no idea how happy I was to come across this rub!
