I took a culinary journey south of the border tonight and grilled up my first batch of tablitas with pecan for smoke. That said, they definitely won't be my last and will find their way into my rotation! Good food!

Never heard of it, (and not likely to around these parts)
but it looks delicious! - some really nice quality looking meat.

They are Mexican marinated beef short ribs only to be found here in Hispanic grocery stores. The flavor is very similar to marinated fajita meat. As someone else told me, they are like chicken wings of the ribeye world! Laughing Very tasty!

We had a couple real nice Mexican grocery stores in
Rockford, Il with fantastic butchers when I lived there
some 7 years ago, but alas Crying or Very sad . The town I live in
now - and I just looked this up - has a Latino or
Hispanic of any type population of .77% and therefore
little chance of any Costilla De Res Marinada Short Ribs
in my near future! I love my small town, but sure do
miss the options some of y'all get to enjoy.

The fat content on those looks low, wish I could find better SRs here. I use a Kalbi Jim Korean recipe that's very good. Those look great..

I agree. Those are the leanest short ribs I've ever seen.
