My town has great events on the square during the spring, summer, and fall here. I've had great luck selling to the public at these events.
Anyway, there was a nice line and I've got my head down making sammies and nachos as fast as I can, while my wife/partner is handling the window.
Who sticks their head in the order window? Surprise, it's time for your semi annual HD inspection. I could not have been busier at the time.
I hardly looked up while she was there. She asked me the usual questions about reheat and holding temps while checking my thermometers and probing with her Thermopen. She checks to see we have hot pressurized water, sanitizer, test strips, and the like.
Thankfully, I stick to the rules and had zero violations, but it kinda freaked me out to have her pop in like that.
I guess my point here is, follow the rules and you won't get caught off guard when you least expect it.

Great job on the inspection...not only did you pass, but the way you were inspected...you didn't have to think about anything, your SOP were perfect and instilled into all your workers and yourself...that says alot.. _________________ Kevin "Corndog" Cameron

Glad you practice safe habits. You'd be surprised how many people would have used being busy as their excuse for ignoring safety. Nice to know someone is doing it right...

Nice job I'm sure you do everything by the book and will never have problems.
Our last inspection of the year (like yourself we are required to have two- or more if they like) ours went something like yours, with a twist.
She showed up at our market and we were busy as all get out.
Told me right up front she hadn't even brought a therm as she knew our stuff was right.
And although you never want to volunteer info, I did offer to lend her my thermapen!
Went through the checklist, made some notes, and went off to find the taco truck at the flea market across town where she told me it was guaranteed that nothing would be right so that's where her time would be spent for the morning.
Yes they will get know you, and yes your reputation will preclude you from any hassles. _________________ BBQMAN

My last inspection, during a busy lunch, was no problem either. I had a manager ask me what to do because we were too busy for her or me to follow the inspector around. I told her that the inspector knew what to do and it wasn't our responsibility to babysit him while he was there. It took him less than 10 minutes to look around (again, he knew what he was walking in to), gave me my copy of the report, and he hit the road.
Inspections are not supposed to be stressful. Good habits on your part will make it that way. _________________ Somewhere in Kenya...a village is missing their idiot. |

| We just had ours done on saturday too. Pretty busy when she showed up and ten minutes out she was gone. Funny thing was most of the time was spent talking about the local following we're creating. |

I had a surprise HD inspection last Thursday. Sherry came around 4PM when I was slow but getting together a drop off for an end of year party for 50 exchange students.
It was my worst inspection. She suggested I put a runner between my trailer and pit (I'm in a very Sandy area). She wanted a hand wash area at my pit 10' away from the trailer.
After going in the trailer she was impressed (she had never seen the trailer, I talked to her numerous times during the build to be compliant). I overbuilt everything she wanted. She waved the need for the pit hand wash station.
I was whacked 4 points for not having a clearly labels sanitizing bucket and cloth: 96. first time I didn't get a 100. |

They have to justify where your tax dollars are going.

WOW!!! Ten minutes. That must be nice.
To be honest they haven't hit me catering or vending yet but at the raunt we were told by the inspectors they are required to stay at least 3 hours.
We also received inside information that they were told to find as much wrong as possible because thay are running short of funds and need the $300 re-inspection fee.  _________________ Due to recent cutbacks the light at the end of the tunnel has been turned off!!! |

No matter if its catering or events or in a restaurant up front everyone that works for us makes the HD aware that we know they are there to help us! Amazing how much that helps in a quick inspection... just saying _________________ www.ridgeviewbbq.com

in our area, th inspector covers 5 counties, one guy.
he stated that if the event doesnt draw 5000 plus, he wont be there...he tries to visit every fixed location once or twice per year, but it has been more like 1 1/2 years since his last inspection....cj |
