We have successfully vended spare ribs for the past six years. Spare ribs because they are cheaper. We sell by the pound, wherein its buyers choice as to one rib, or racks of ribs.

We only do one-day events and only for a lunch run. Initially we tested each market with 150 lbs, now our avg. sales per event (depending on the size of the town) runs from 250 to 600 lbs. Our prices are $9.75 per lb.

We only attend non-profit sponsored events such as a Chamber, Rotary etc.

It's my second biggest seller 1st is pp,I sell in 3bone,half rack full rack.I sell sometimes st.louies.but most of the time a untrimmed spare.especially if there are other bbq vendors.makes our ribs look bigger.

I haven't order any this year but it's on my call list this week.I'll post when I find out.I start vending first weekend of june.

We used to sell St. Louis cuts but now we do spares, easier, more meat, seems to cook better and cheaper to buy. I don't trim them other than remove a nasty bit if there's any.
Ribs are our # one seller and can sell them all day..

We pay $5.70 a kg which is $2.60 per lb here in the sticks..

I just paid $1.81# for spairs and $1.36# for butts from GFS. They were close trimmed with 1/4 fat on the butts and flap was trimmed on ribs

I cut mine down to st. louis cut and then sell the rib tips as well. 20$ slab plus 5 rib tips for 4$

We get spares by the case (8 racks per) for $1.78/lb at the local BJs. Peel & trim them, then rub & smoke for 4 hrs on applewood. Usually end up with 2 big half pans of rib tips per case.

We charge $10 for a rib plate: 3 bones & 2 sides
$15 for a half rack
$25 for a full
$6 for rib tips & 1 side

We're just starting out (have only done 4 weekends to date) but so far they are our most popular item.
