I was wanting to do something new and different with grilled chicken for dinner tonight. So, I grabbed several of my Weber grilling books and thumbed thru them looking for something to try. I found a recipe for Pollo Diablo (or devil chicken in Spanish) it looked like it may have some flavor and some heat so I made up the marinade.

The marinade.
In the fridge to sit 3-4 hours. Now I need to figure out what to have with it!

For some reason an idea popped in my head to fire roast the corn. I had two cans of corn so what not try it.
I sprayed the wire pan with PAM to keep the corn from sticking. And drained the cans of corn as well.
Chicken on the grill.
Smells great grilling.
Done and on the plate.
Plated goodness! Man oh man this recipe is a keeper! Loved the flavor and the little hint of heat...great just great. And fire roasting the corn was an added really nice flavor. I would recommend giving this meal a try.
Pollo Diablo
from Weber's Big Book of Grilling
3 Tbl. extra-virgin olive oil
3 Tbl. fresh orange juice
3 Tbl. fresh lemon juice
2 Tbl. fresh rosemary, finely chopped (I used dried)
1 Tbl. minced garlic
1 Tbl. crushed red pepper flakes
2 tsp. kosher salt
3-4 pounds chicken parts (I use skinless, boneless breasts)
Whisk together the marinade in a small bowl. Rinse the chicken parts and pat dry with a paper towel. Put the chicken in a Ziplock bag and pour in the marinade. Seal, turn the bag to distribute the marinade, and place the bag in a bowl. Refrigerate for 4-6 hours or longer, turning occasionally.
Shake off the excess marinade from the chicken. Grill the chicken, skin-side up, over indirect high heat until the juices run clear and the temperature reads 165 degrees F. at the thickest part (about 35-50 minutes). |

Looks great and I bet it tasted even better. I'm gonna give that a try. _________________ Never met a cow that I didn't like with a little salt and pepper.

Everything looks great jeepdad. Every once in a while it's good to grill chicken with just marinade and no sauce at all. I think chicken tates great on its own. _________________ WSM 18.5"
