I use apple for ribs and I ate at a place that had apple/cherry smoked ribs and I'm looking into the world of apple/cherry smoking.

I just scored the apple (pic below) but the best deal I can find on cherry chunks is $11.50/5lb at walmart online. everyone else kills you on shipping. if I cook pork with apple/cherry, what ratio do I use of each?
I know apple goes a looong way and it's easy to over-do it

Really? Heck, I've done numerous pork and beef cooks with just apple and have yet to have anyone not love the flavor. Is your smoke a nice, thin blue?

Anyway, I do more often then not mix in some wild cherry, sugar maple, oak or alder, usually 2/3rd apple, to add some extra zing...

http://www.pickyourown.org/ILchicago.htm check for cherry orchards, then phone them and find out when they trim and if they keep a supply of older wood.

I can get 50lb from marks tree farm for about $2/lb.

that should get me thru this year. I looked at that farm list. nobody close by has cherry trees. maybe I should plant some Smile

I don't think I've ever overdone it with apple wood. In fact, apple is one of my safest woods. As far as mixing with cherry goes, I've only tried it half-and-half. I like all cherry, and I like all apple, so any combination probably works just fine for me. What are gonna be cookin' for me? Smile

I just used apple on chicken today and barely tasted it but I have over smoked ribs twice. I will play with cherry soon.
