Smoked Lemon Peppered Fish
Having grown up in Palm Beach Florida I love fish of all kinds. The only problem is that for the past 15 years I have lived in the middle of the southwest largest beach. No water, just all beach. My wife wants me to begin to eat healthier so I came up with this really easier that is ready in about 30 minutes. The choices at my local grocer were either salmon or tilapia, so I decided to do both.
1 lb. Salmon
1 lb. Tilapia
½ Stick Butter
6 oz. KC Masterpiece Lemon Pepper Marinade
Cut the butter into small pats and pour 4 ounces of the marinade into the bottom of a disposable pan.
Take both pounds of fish and place atop the butter and marinade in the pan. Once arranged, pour the rest of the marinade on top of the fish.
Place in your pre-heated smoker at 275 degrees and cook for approximately 30 minuets until the meat looses it translucency and easily flakes.
The fish is very moist with a light smoky flavor. I use the remaining mix of marinade and butter over rice or mixed thoroughly with melted cheese and poured over vegetables. _________________ https://www.linkedin.com/in/michaeloberry |

Alien, you've done it again. Sure puts my plain smoked Tilapia to shame.
Thanks for the recipe. I'll share it with the little mrs and I'm sure we'll be trying this out real soon. |

| I have just entered the realm of having to watch what I eat after some heart palps that scared the bejeezers outta me. Went to the Doc and found my colesterol a tad high. I gotta say, a 1/2 a stick of butter is rather reminiscent of Paula Deen. I would probably want to substitute some olive oil instead. Looks better with the butter though and well as tasting butter, I mean better. Freudian slip. |
