A buddy of mine from work lives in apple and cherry country, Door County WI. His buddy has a cherry orchard and he scored me a ton of wood. I'd say I have 100lbs in this box and plenty more at his place. He lives on 40 acres and has some old apple trees on the property. We're going to take one down and then I'll be set for apple. The cherry still needs to dry a bit more. It was cut down last fall to make room for something else. It was just piled up and still has a lot of moisture.

So, to say thanks I'm smoking him some ribs. Since I had to light her up I figured why not fill it up. I decided to get a small butt and cut it in half. The grocer also had some awesome looking short ribs so I went there too. Lastly, I decided to whip up a spicy bbq sauce to pull everything together. Basically just Ketchup, vinegar, apple juice, molasses, hot sauce, sugar and spices.

More to come!
