Made a beer butt chicken for dinner tonight.
This is one of my favorite ways to BBQ chicken
rubbed it down with some oil and rub. Also put some rub in the beer can
after putting the can up it's you-know-what, it's sit nicely on the grill. also I add some apple wood for a nice smoke flavor
1 1/2 hours later
put it together with some homemade pea salad and roasted red potatoes

I have done this once and need to do it again. It's really good.
The one time I did it, I cooked two of them fairly low (temp between 230° and 260°) but I think when I do it again, I will get the temps higher, to the 275° range the whole time and see how it does with the skin. It wasn't bad, but it was a little rubbery. _________________ Scott V.

smart to put the foil under the bird... I did 2 last weekend on my gasser and ended up with one massive grease fire... ended up putting out the fire, and placing a foil roaster under the birds to catch the grease.
Birds were salvaged... we weren't eating the skin so the meat inside was still good. _________________ WSMx2, Genesis Silver B, & BabyQ |

Sometimes a necessary evil works to the common good. I lament everytime I pour a beer into a pan or into a marinade, but then I look at the whole box of beer it just came from and I smile. (And I also positively grin when I remember how damn good the food is going to be!)

This is where black and white mix to grey...
I don't want to open a semantical can or worms.
BBQ - Slow cooked with wood.
Grill - Cooked over direct heat on a grill
Indirect grilling.....kind of a mix of the two.  |
