I saw a site that used a method of wraping brisket in brown butcher paper instead of foil to keep the bark from getting soft. I never liked the foil method because of the steaming of the meat. The buther paper keeps the bark crunchy. I am in Georgia so pork is king. Has anyone used this method

Louie Mueller's in Taylor Texas does this. He has one of the best brisket's out there.

Here's a guy in Texas that use's paper, he cooks at 260-270 F. Look at the BEEF, YUM Exclamation

Aaron makes the best brisket in the country. It is so ridiculously moist, I don't get it. If any of you are ever in Austin, you need to hit up Franklin. Get in line early or you won't get any. I believe he learned his technique from working with John Mueller, related to already mentioned Louis Mueller.
