So, I got to work Sunday afternoon, used some of my building skills, and replaced the shack that used to sit at my friends station - he bought the materials, I supplied the labor - i CAN SET UP THERE ANY TIME ANY LOCAL CHARITY HASNT ASKED TO USE, USUALLY sATURDAYS, when I have cooking gigs anyhow.....was nice not having to tear down tents tonight!! Will be installing roll up doors and locks, 50 amp service and maybe even a sink - all stuff the station owner wants in it and is willing to pay for - I am making a living and was approached by our county fair people today to set up at the fair as they love my product!! This "hobby" is gonna kill me...LOL Laughing Cool Very Happy

Roof isnt on yet - ice and water shield is so bring on the rain etc - metal roof next week then roll up doors!!

Thanks for the well wishes and concerns!!
My local health department is completely clueless to the best of my knowledge! It took them months to finally get me to contact the state inspector - its really crazy!
I use the gas station as my commissary - sink, dishwasher, coolers and super freezer all at my disposal - screened in window / door on the shed which is built to hold sidewalk salt in the winter. They have always allowed church groups etc. so if bust my chops, there will be repercussions!
On another note, I was asked by the head of our County Fair to set up there this year after he ate my food twice - I took it as a real compliment!

I served a group that included a member of the fair board and the board here has now invited me to vend the county fair. Very Happy

I'm really grateful that our food and word of mouth are helping us to take off.

I always feel like I should give credit to the smokering and it's members, who have helped me more than I can say here.

Just giving fair warning that's all.

Where I'm from, non-profits are pretty well exempt from the rules you would have to follow so long as they meet certain criteria. So thinking they would have repercussions if they insisted I follow the law would be a mistake...again, where I"m from. Your state may be different.

This is all in an effort to help you. Regardless whether or not your local health department has a clue you still "should" contact them. Taking these things for granted can cause you headache down the road.

Just trying the help. Hope you understand that.

I fully understand and appreciate the replies - sorry if my wording sounded negative!!
We had an inspector somewhat recently try to make a small candy company spend [tens of ? ] thousands because they had 1 scoop! He wanted them to have a three bowl sink, sanitizing dishwasher - on and on from what I recall - it made the news and they made a mockery of the already seemingly sub-par record of the inspection dept...it seems we can now sue them for harassment quite easily so they do back off from what I have seen.
Keep the input coming!! I dont always reply appropriately, but DO listen to the input!
