Thanks guys! I will say, doing a party for 70 masons [ mortar forkers, not masonic lodge] the next days buffet style was a breeze compared to makin sammies to order, and paid more - but its a labor of love - and, once the warm weather comes, so should the business! Tons of questions about the "contract cooking" I do too - win / win week for sure!
Today I went to pick up a free truck load of fresh cut hard Maple, put a log through my rear window on my truck - so much for "free" wood.....I am gonna stick to having it delivered from now on! _________________ Money Maker

I vend a couple of events locally, a car show in the spring and an arts festival late summer. Easy to gross $1000 in 4-6 hours! Its fast paced & heck-tick at times but a blast, i really enjoy it. I think that one can look at it a couple of ways. Either sell a little for a lot($) or sell a lot for a little($). In other words when people think they are getting a good deal its easy to sell out. I also try to make sure i have something on my charcoal grill cooking for that visual effect..... "that looks good" & the smoker puffing out a whiff of smoke for smell-o-vision..... "i can smell that down coming down the road"
People are curious by nature & if they aren't hungry... they will at least try some thing if i have a low dollar menu item for a few bucks.
We eat with our eyes and nose too.  |

Thanks again Jeff - the chicken legs were / are a big hit - thanks!! I keep them grilling for just that reason - only had one request for a brat, not one request for a burger- so not sure I'm gonna bother .... I was piling the pork as high as I could and handing out sporks with every order - I love sporks....lol 1000 for $6 ! I also had 3 sized buns - $2-$4-$6 , sold out of the $6 buns first!!! Only brought 48 of them.....then the $2, some wanted 4 of the $2...[they were very nice dinner rolls] and the wife thought I was too expensive......
New bun supplier this week - really nice Kaiser rolls for a good price - no seeds [ that chased a few away from the $6, but was what I had available]
Forcast for upper 40's - hello summer!!...  _________________ Money Maker

I like the idea of chicken legs. Did you use a leg rack to get more on? Smoke first then grill?
Avg weight and your selling price? (You can PM me if you want)
Sporks for $6/1000 Where?
I only do two sizes of sammies, sliders (Hawaiian Rolls) with about 1.5-2 oz meat & a 5" bun with 1/3 pound of meat. Beef, Pork, Chicken breast.

I buy the legs at Restaurant depot, 40 pounds cost about $24.00, get about 90 wings = $.27 each, sell for $2.00 3 for $5.00 - I USED to smoke then grill, but up here people think smoked chicken is raw.....I brine them in salt/sugar/ my rub then grill - baste with my BBQ sauce and hold for hours with great success due to size and brine!I use half my grill on the Lang to do 30-40 pcs at a time, keep a hotel pan on the other side, rotating as I make more
The sporks also come from the RD, were on sale last time there - not real heavy, but plenty heavy for vending IMHO $6 and some change... _________________ Money Maker

Google kaiser - there are many types - a larger hand made roll, some are hard some are soft - the old Germans around here like the chewy, tougher "scratch" type, while the younger prefer a softer bite [ like me]
Wally worlds carry "original" Hawaiian rolls, they are smaller than a Kaiser, and sweet - go good with about anything!
A "spork" is one of the greatest inventions of modern times IMHO.....
Soo many styles, so few spork space available in my storage trailer.......  _________________ Money Maker

I sell about 130 -140 legs when we vend... go figure people love em grilled. Another product that sell well for us is Riblets. They smoke fast in about 2-3 hours and if i`m in a pinch for time, i smoke for an 1 - 1 1/2 hours then grill to finish. Sell the snot out of them too. 40 -60 lbs a vend.
These riblets are a "Farmland" product. Come 30-40 pieces per 10 lb box. Price varies from $9.90 - $15.90 a box depending on the time of year and sales. Last year we sold 3 strips of riblets for $5.00... probably too cheap but we sell a lot of them so it works for me.
Description:
This item is derived from the transverse processes and associated lean from the lumbar vertebrae of any IMPS bone in pork loin after removal of the tenderloin and the loin eye. Riblets shall; contain no less than four transverse processes (sometimes referred to as “paddle” or “finger” bones.
If you can find them, try a box and see what you think. People seem to really like them here. The profit margin is good(at least i think so) and they sell well. It provides a "rib" product that doesn't take too long to cook or prep. I just rub and smoke. Sauce on the table if they want it.
When we do pulled pork i get "Select" brand hamburger buns from our local Sara lee outlet, 3 3/4 inch size. Soft and moist bun i really like them & my customers do too. Not a dry or hard bun by any means. These buns are big enough to make a nice sized sandwich but yet not too big. When we "pile it on" it looks impressive also. |

Havent tried them vending or catering - I have heard people whine about sesame seeds, so I figure I'll go nice bun, but plain! 3:30 here - off to start the smoker - PP / chicken legs / brisket and pulled turkey today! My new buns should be there already - lookin at mid 50's - should make a killing based on last week!  _________________ Money Maker

Thanks Lost Nation, I wish you well!! and all who are watching - I moved $1000.00 [ish] worth of product this week - building a permanent booth this weekend - owner is supplying all the materials - local fund raising will be done out of it when I have parties - he is supplying fridge, freezer etc - even picnic tables - I fell into a gold mine! Funny how a few miles changes the name.
Some of the pieces in the boxes i get are meaty, some not. But yeah good stuff, cooks fast & easy. Count varies from 30-40 pieces in the box.
I`m under the impression that they are next too or between the loins? Guessing that they may contain a wee bit of the loin meat also... Yes? |
