Heres how I skin the Bacon bellies use a roofing knife and cut into 2-3 inch wide strips then hold the end with catfish pliers and run the electric knife just under the skin. Works like a champ

71ragtop, thanks for the post. You are about 6 months late. I used a boning knife on 36# of belly. Shocked
What a F'n job that was. Next time, I'm doing it your way, looks a whole lot easier, and less waste.
BTW, do not let your dogs have any belly skin and let them in the house. Shocked Just sayin' Embarassed

Ya believe me I have battled with a knife before but this works way better. All the wrinkles make it a major PIA. Got 8 bellies curing as we speak all averaged about 13-14 lbs only thing that sucked was the $1.99 price tag
