Walking through Costco I saw a cut of meat that I have never seen before, Rack of Pork:
I decided to do the absolute minimum to the meat so I rubbed it with some Big Ron's OG and threw it on:
Here it is after 40 minutes wrapped in foil, not my choice:
The ends turned out medium but the middle still looked good:
Here it is plated up with some roasted bell peppers and finger potatoes:

I went into PB and resized each pic but I cannot tell the difference so I am sorry if I screwed up, again! Hopefully that did the trick and I also changed my upload options so this should not happen again. _________________ Nate

Thanks for the attempt.
Now you've changed the settings you will need to reload these images at the new setting, as yet they are still too large. _________________ Here's a change Robert.

"White Marble Farms" started an advertising campaign a few years back calling that the "Pork Prime-Rib"
We did those at the country club a few times, they went with very limited success except for the "Octoberfest in August" Party when we could barely keep up.
It looks great, but I am so over pork it isn't even funny anymore _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

In NY that is just a bone-in pork loin roast. I usually roast one every month or so. Still, looks great! I think I'll try one in the smoker when it warms up around here.... _________________ Pat

I saw that at Costco this past weekend as well but ended up skipping it as my freezer is full. _________________ CharGriller Pro w/sfb and mods

Saw one today at Kroger. Hard to pass it up but it was 3.99 a lb.
Still might try one later.
It sure looks like it turned out great.
Good job. _________________ Weber Kettle

I came back this morning and all pics were resized properly. Something must have been caching the photos or maybe there is some processing time in PB's network.
Thank you everyone for the comments and I forgot to mention that I pulled it off the smoker at 150 degrees. _________________ Nate
